Gujiya
Prep Time: 17 mins

Ingredients:
Dough: 1 cup maida, 2 tbsp ghee, water as needed
Stuffing: 1 cup shredded coconut, 1 cup grated khoya, ¾ cup jaggery powder, ½ tsp elaichi powder, chopped almonds, cashews, and kishmish
For Brushing: 2 tbsp oil
Method:
Mix maida and ghee, kneading to a soft dough. Cover for 15 mins, then knead again.
Divide into small balls, roll into thin circles, and place in a Gujiya mold. Add stuffing, seal, and trim excess.
Brush with oil. Preheat oven (200°C) in convection mode for 5 mins.
Arrange Gujiyas on a crusty plate, place on the grill rack, and bake at 200°C for 12 mins, turning halfway. Serve warm.
Shakkarpara
Prep Time: 19 mins
Mode: Convection
Ingredients:
2½ cups maida, ¾ cup ghee, ½ cup cream, 1 cup jaggery powder, ½ cup milk, 2 tbsp oil for brushing
Method:
Mix jaggery, ghee, cream, milk, and flour. Rest for 30 mins.
Roll dough to 1 cm thickness and cut into 2 cm Shakkarpara shapes.
Preheat oven to 200°C in convection mode for 5 mins. Arrange on a baking plate, brush with oil.
Bake at 200°C for 14 mins, turning halfway. Cool and store in an airtight container.
Nankhatai
Prep Time: 10 mins
Mode: Convection
Ingredients:
1½ cups maida, ½ cup besan, 1 cup honey syrup, 100g butter or dalda, ½ tsp baking soda
Method:
Cream butter and honey syrup. Add besan, maida, and baking soda; form a dough.
Shape into medium-sized balls and place on a crusty plate.
Bake at 170°C for 10 mins in convection mode. Serve warm or cool.
Chivda
Prep Time: 8 mins
Mode: Micro mode
Ingredients
4 cups thin poha, ¾ cup raw peanuts, ½ cup chana dal, ¾ tsp cumin seeds, ¾ tsp mustard seeds, 1 tsp sesame seeds, ½ cup cashew nuts, ½ cup coconut slices, 1 tbsp raisins, curry leaves, 2 tsp broken red chili, ¼ tsp turmeric powder, pinch of hing, salt and oil to taste
Method
In a microwave-safe bowl, add all ingredients except poha, cashews, coconut, and raisins. Microwave for 3 mins.
Add remaining ingredients, stir, and microwave for 5 mins, stirring twice. Serve warm.
Coconut Barfi
Prep Time: 9 mins
Mode: Micro mode
Ingredients:
3 cups grated coconut, ½ cup melted ghee, 1 cup milkmaid, 2 cups milk, ½ tsp cardamom powder
Method:
In a microwave-safe bowl, mix ghee and coconut. Microwave for 3 mins, stirring every minute.
Add milk, cardamom powder, and milkmaid. Microwave for 6 mins, stirring twice. Serve warm or cool.
Gajar Halwa
Prep Time: 12 mins
Mode: Micro mode
Ingredients:
3 cups grated carrots, 1 cup grated mawa, ½ cup honey, ½ cup condensed milk, 1 cup milk, cardamoms, pistachio flakes, almonds, raisins, ¼ cup ghee
Method:
In a microwave-safe bowl, mix carrots, mawa, honey, and ghee. Microwave on high for 6 mins.
Add remaining ingredients, stir, and microwave for another 6 mins. Serve warm.
