Mountain enthusiasts usually flock to North Bengal, especially Darjeeling, to enjoy its scenic beauty. Among the popular dishes enjoyed here is the Nepali dish called ‘Tama’, a must-try in the hills.
This traditional Nepali tribal dish is made from bamboo shoots. After a bamboo plant is harvested, locals extract the edible shoots from its base and bring them home. The shoots are then thoroughly cleaned, the bark is removed, and the bamboo shoot is cooked to create this unique and flavourful dish.
Talking to News18, a local resident explained the preparation of ‘Tama’. The cooking process begins by peeling the bamboo shoot and removing its outer layers. The shoot is then cut into smaller pieces and boiled with turmeric and salt for 20 to 30 minutes to soften its texture and remove any bitter taste.
Next, one has to take a wok and saute chopped onion, tomato, ginger, garlic, and cumin seeds in oil. The boiled bamboo shoot pieces are added to this mixture, and the dish is ready to serve. Tama can be enjoyed hot, and with rice or roti.
Different types of pickles and other dishes made from bamboo shoots have also become favourites among tourists.
