Stollen Bread by Chef Amit Sharma, Love & Cheesecake

Ingredients:

  • 4 cups all-purpose flour, ½ cup sugar, 1 tsp salt, 2 ¼ tsp instant yeast
  • ½ cup warm milk, 2 eggs, ½ cup butter, 1 tsp each vanilla & almond extract
  • Zest of 1 orange, ½ cup raisins, cranberries, candied citrus peel, marzipan log
  • ¼ cup almonds, 2 tbsp rum/orange juice, powdered sugar (for dusting)

Instructions:

  1. Soak fruits in rum/juice (1 hr).
  2. Mix flour, sugar, salt, yeast. Add warm milk, eggs, extracts, zest. Knead in butter.
  3. Mix in soaked fruits, peel, almonds. Let dough rise (1.5 hrs).
  4. Shape dough around marzipan log, seal edges. Let rise (45 mins).
  5. Bake at 180°C (30-35 mins). Cool and dust with sugar.

No-Bake Chocolate Cherry Cheesecake by Chef Neha Deepak Shah

Ingredients:

  • ½ cup chopped Chilean cherries, 200g chenna, 100g dark chocolate, cocoa powder

Instructions:

  1. Crumble chenna. Melt chocolate.

  • ¼ cup butter, ½ cup chocolate chips, ¼ cup walnuts, cranberries
  • 2 tbsp cocoa, 2 tbsp brown sugar, 1 tsp cinnamon

Instructions:

  1. Mix dry ingredients. Add milk, eggs, and butter. Knead till smooth. Rise (1 hr).
  2. Roll dough, spread cocoa-sugar-cinnamon mix. Sprinkle chocolate, nuts, cranberries.
  3. Roll into a log, cut lengthwise, twist into braid. Rise (45 mins).
  4. Bake at 180°C (30-35 mins). Brush with sugar syrup.

Gingerbread Baked Cheesecake by Chef Amit Sharma, Love & Cheesecake

Ingredients:

Crust: 1 ½ cups crushed gingerbread cookies, ¼ cup melted butter

Filling: 500g cream cheese, ½ cup sugar, 3 eggs, ½ cup sour cream

1 tsp vanilla, 1 tsp cinnamon, ½ tsp each ginger & nutmeg

Instructions:

  1. Press crust mix into pan, chill. Beat filling ingredients till smooth.
  2. Pour filling over crust. Bake at 160°C (50-55 mins). Chill (4 hrs).
  3. Top with whipped cream, mini cookies, cinnamon sticks.

Fried Ice Cream by Barbeque Nation

Ingredients:

  • 4 ice cream scoops, 1 cup breadcrumbs, ¼ cup flour & cornflour, 50g sliced nuts, oil

Instructions:

  1. Freeze ice cream balls (2-3 hrs). Coat with nuts, breadcrumb, slurry, breadcrumb.
  2. Freeze again (2-3 hrs). Fry in hot oil (190°C) for 10-15 secs.
  3. Serve immediately with chocolate syrup and nuts.

Pumpkin Wreath recipe by The Den

Ingredients:

  • 400g pumpkin purée, 8 egg yolks, 300ml milk, 400ml condensed milk, 300g cream
  • 5g cinnamon, 5ml vanilla, 360g butter, 280g icing sugar, 680g flour
  • 3 eggs, 100g almond flour, 50g berries, 75g whipping cream

Instructions:

  1. Mix pumpkin, yolks, milk, condensed milk, cream, vanilla, cinnamon.
  2. Make dough with butter, sugar, eggs, flour. Chill (30 mins).
  3. Roll dough, line pie dish, pour filling. Bake at 175°C (30 mins).
  4. Decorate with whipped cream, berries.

Coconut Snowman Chocolate Fudge Cake

Ingredients:

  • 100 eggs, 900g sugar, 750g butter, 500g chocolate, 500g flour, 15g coffee
  • 90g cocoa powder, 150g cocoa butter, 150g white chocolate, 50g desiccated coconut

Instructions:

  1. Beat eggs, sugar. Add melted butter, chocolate, coffee, flour, cocoa.
  2. Bake at 175°C (35 mins). Cool. Cut into snowman shapes. Decorate with Rocher.

Ingredients:

  • 100g butter & sugar, 1 egg, 150g flour, 2g baking powder, 50ml milk
  • 25g pista, almonds, 1g each orange & lemon zest

Instructions:

  1. Mix dry ingredients. Combine wet ingredients. Mix together with zest and nuts.
  2. Pour into greased mold. Cover with foil. Bake (1 hr). Cool. Decorate as desired.
